Lemongrass Basil Chicken with Turmeric Cauliflower Rice
This zesty, flavorful dish is minimal in ingredients but maximum flavor! The best part? This low carb, keto-friendly dish is ready in under 30 minutes!
Place a skillet over medium heat and add sesame oil.
When the oil is nice and hot, add riced cauliflower and break up any chunks. Mix cauliflower so it is evenly coated with the oil.
Cook the cauliflower rice until it is nice and tender, stirring frequently to keep it from browning.
Mix in turmeric powder, ground ginger, and salt and pepper. Stir until evenly blended then set aside.
Warm a separate sauté pan over medium-high heat and add olive oil. Swirl pan to coat the surface.
When the oil is hot, add chicken and spread out evenly.
Cook chicken for about 3 minutes on each side.
Continue cooking chicken, using tongs to flip occasionally, until chicken is browned and cooked completely—about 10 minutes total.
Add in Kevin's Natural Foods sauce and stir to coat evenly. Let it simmer a few minutes to incorporate all the flavors and to allow the sauce to reduce and thicken.
Serve chicken over cauliflower rice and top with some chopped parsley for garnish. Enjoy!

This recipe can be made with fresh or frozen cauliflower rice! Make sure to stir frequently if you're using fresh rice to prevent any burning. Or, switch things up by using florets, instead!
